Take neshe chese and pare hit and grynd hit yn A morter and breke egges and do ther to and then put yn buttur and creme and mell all well to gethur put not to moche butter ther yn if the chese be fatte make A coffyn of dowe and close hit a bove with dowe and collor hit a bove with the yolkes of eggs and bake hit well and serue hit furth. – MS Pepys 1047

My Version

The recipe does not tell what cheese to use only that it be soft. I chose to use camembert and farmers cheese together. The farmers cheese gives it a bit more body and the camembert adds a great flavor.

The cheeses were mashed together with eggs and then a small amount of butter and heavy cream were added to the mixture. The cheese & egg filling was put into a pastry crust and covered with a lid of pastry. The dough was brushed with egg yolk and the tart was baked until the filling is set and the crust is golden brown.
